Prime Rib dinner with mashed potatoes gravy

🥩 Ingredients

For the Prime Rib

1 rib roast (2–3 kg)
Salt (generous)
Black pepper
4–5 garlic cloves (minced)
Fresh herbs (rosemary, thyme)
2 tbsp olive oil or butter
🥔 Mashed Potatoes

4–5 potatoes (Yukon gold or similar)
3 tbsp butter
½ cup milk or cream
Salt & pepper
🍗 Gravy

Beef drippings (from roast)
2 tbsp flour
1–2 cups beef broth
Salt & pepper
🥬 Green Beans

Fresh green beans
2 cloves garlic (chopped)
1 tbsp butter or olive oil
Salt🥖 Yorkshire Pudding
1 cup flour
1 cup milk
2 eggs
Pinch of salt
Beef drippings (for baking)
⸻ Instructions

Cook the Prime Rib
Let meat sit at room temp for 1 hour.
Rub with salt, pepper, garlic, herbs, and oil.
Roast at 220°C (425°F) for 20 minutes (for crust).
Lower to 120°C (250°F) and cook until internal temp:
Rare: 50°C
Medium-rare: 55°C
Rest for 20–30 minutes before slicing.

Make Mashed Potatoes
Boil potatoes until soft.
Drain and mash.
Add butter + milk.
Season with salt & pepper until smooth.

Prepare Gravy
Use pan drippings from roast.
Add flour and whisk (make roux).
Slowly add beef broth.
Simmer until thick.

Cook Green Beans
Sauté garlic in butter.
Add green beans.
Cook 5–7 minutes (slightly crisp).
Season with salt.

Yorkshire Pudding
Mix flour, milk, eggs, salt into smooth batter.
Heat muffin tray with beef drippings until hot.
Pour batter in and bake at 220°C (425°F) for ~20 min.
Don’t open oven while baking.
Final Tip
Slice the prime rib thick, plate with creamy mashed potatoes, pour gravy on top, and add greens + Yorkshire pudding on the side.
